Gluten is a complex protein found in most members of the grain family. Wheat, barley, oats, etc. Those of us that are gluten impaired have issues digesting that particular protein. Celiac Disease is the common name however this speaks of the specific autoimmune disease where the consumption of gluten causes the body to attack it's own intestinal track. It is a debilitating condition that can cause many other health related problems and if left untreated causes severe digestive damage that can lead to removal of intestines and even early death. Others simply have an intolerance where the body cannot digest the protein but does not really cause any lasting damage.

Joe Momma's

Gluten free pizza. Need I say more? I've heard some complaints about gluten free crusts being too crisp and "cracker-like" but honestly, it's so nice to be able to consume pizza that I really don't care. The crust is definitely crispy (think thin crust traditional pizza.) Joe Momma's has such an amazing selection of toppings and specialty items that you can create some pretty amazing combinations. I've been there twice thus far and usually get frilled chicken with marinara sauce, fresh basil, feta cheese, and olives. It's delicious. Next time I plan to try something a little more adventurous. I've had good and bad experiences with their service. The first time it was excellent. The atmosphere is eclectic and even the staff has a certain air of uniqueness. My second experience there was not quite as jovial. The only table they had available was on the patio and unfortunately for us, it wasn't really that warm outside yet. My son did enjoy watching them toss the pizza dough from some such a great vantage point. However, our waiter conveniently forgot about us and we didn't actually get to eat our meal until an hour or more after we arrived. I give it an A.
