Gluten is a complex protein found in most members of the grain family. Wheat, barley, oats, etc. Those of us that are gluten impaired have issues digesting that particular protein. Celiac Disease is the common name however this speaks of the specific autoimmune disease where the consumption of gluten causes the body to attack it's own intestinal track. It is a debilitating condition that can cause many other health related problems and if left untreated causes severe digestive damage that can lead to removal of intestines and even early death. Others simply have an intolerance where the body cannot digest the protein but does not really cause any lasting damage.

El Tequila

I know, I know... this is not on the list. However, I have a coworker who's daughter is gluten impaired and she informed me of it. This is the first restaurant I experiemented with gluten free. I have eaten there pre-gluten diet and wasn't incredibly impressed with their food. However, the only location I had dined was 81st and Memorial. The one I regularly visit now is the Elm location in Broken Arrow. Their food is AMAZING. My boyfriend has commented that they have the best Mexican cuisine he has tasted. The service is excellent; I've never waited more than 10 minutes for a table. The wait staff are very fast and thorough. The atmosphere is like that of any typical Tex-Mex establishment. It can get a little loud (especially on a Friday or Saturday night) but the overall experience is so awesome that it's worth it. They don't have a designated gluten free menu but my coworker's daughter has inquired and they state that all of their enchilada meals are devoid of the poison. I have eaten their cheese, chicken, and beef enchiladas without any problems. I can also safely eat their chips and salsa as well as their fajitas as long as I specifically request corn tortillas. Overall, I give this restaurant an A+.
